Apple schnapps

Apple schnapps - based on fresh, aromatic apples - has a fresh, fruity taste with wonderful flavours of vanilla and almonds.

Enjoy on its own as appetizer or after-dinner drink.

Or serve with dessert, pie, ice cream, fruit salad, chicken, cheese, and cheese cake. Goes very well too with curries and dishes with pork, poultry and fish.

You can also add a little schnapps to your marmalade, jam, jelly, chutney, sauce, or stew. Or any other dish where you would normally use apple cider or juice.

Apple

The apple tree is native to Europe and Asia and is now grown throughout the world in temperate climates.

There are thousands varieties of apple fruits with different colours, sizes and taste.

Some are wild, others are cultivated.

Some are sweet, some are very juicy, some are highly aromatic and some are acid and astringent.

Apples contain cyanogenic glucosides in the seeds which can be toxic if eaten in large quantities.

Here in Denmark, apple trees grow wild throughout the country.

They grow in nutrient-rich soil in light woods, wood edges, windbreaks, shrubs and field boundaries.

Among other uses, apples are used in the making of apple cider vinegar, wine, and liqueurs.

Also used in the making of fruit brandies, such as the classic Calvados apple brandies from Normandy in France, and the popular Applejacks from the United States.

Recipe

Use fresh, fully ripe and aromatic apples. Wild or cultivated. Organic if available. You can use almost any variety. So start with your favourite one, then try some other varieties.

Direction:

  • Wash and slice 1-2 apples. Leave the skin on.
  • Put them - and also the cores - in a clean glass jar with tight-fitting lid.
  • Cover with clear, unflavoured vodka - 40% alcohol content (80 proof).
  • Let steep for two months or more in a dark place at room temperature, 18-20°C (64-68°F).
  • Shake lightly and taste it from time to time.
  • Strain and filter your infusion into a clean glass bottle or jar with tight-fitting lid.

You can serve your apple schnapps after it has settled for a couple of days in a dark place at room temperature. But some storage (aging) will improve the flavours. Taste it from time to time to find out.
