Lime Schnapps

Lime schnapps - based on fresh, whole lime fruits - is a highly enjoyable schnapps with a fine golden colour and a refreshing, aromatic taste. Very good as appetizer or added to any vodka cocktail. Also wonderful in hot tea.



Serve with marinated herring, caviar, salmon, crayfish, shrimps, gravlax, sea trout, lamb, chicken, and many other dishes.

Or add it to soups, barbecue sauces, curries, salad dressings, whipped cream, marmalades, sorbets, ice creams, cakes, desserts, or any other dish, where you would normally use fresh lime juice or peel.

Lime

Lime tree with ripe limes - Citrus aurantiifolia Citrus aurantiifolia

The lime tree is a small, evergreen tree with short, thorny and irregular branches.

The oblong leaves are light green.

The tree has clusters of small, white flowers, followed by small, bright green fruits.

The juicy lime fruits have a smoother and thinner rind than lemons, and the pulp has a fresh green colour.

Very rich in antioxidants.

The juice is acid with a distinctive flavour and fragrance. It's used in cooking and in drinks.

The essential oils are used for flavouring purposes, in herbal remedies, dietary supplements, anti-aging products, perfumery and in cleansing products.

The lime tree is native to tropical Asia, probably Malaysia. It grows wild in many places, and is widely cultivated in the West Indies.



Recipe

Use fresh, firm and bright green lime fruits - organic if available.

You can make the schnapps in different ways.

You can use either the whole fruits, the whole fruits with small holes in them, the peels only, or the whole fruits cut into quarters or sliced.

Using different methods, you get different results. It's a matter of taste which method you may want to use.

Personally I prefer the method with whole fruits with small holes in them - I use a fork to make the holes.

Direction:

  • Scrub 4-5 lime fruits thoroughly to remove dirt or any chemical residue and wax. Dry them.
  • Put the fruits - or the peels - in a clean glass jar with tight-fitting lid.
  • Cover well with clear, unflavoured vodka - 40% alcohol content (80 proof).
  • Let steep for 1 month or more - in a dark place at room temperature, 18-20°C (64-68°F).
  • Shake lightly and taste it from time to time.
  • Strain and filter your infusion into a clean glass bottle or jar with tight-fitting lid.
  • Store (age) for at least 1 month in a dark place at room temperature before serving. Taste it from time to time.

Serve your lime schnapps at room temperature in suitable glasses. And remember to keep your schnapps bottle tightly closed and in a dark place before and between servings.
