Pomegranate schnapps

Pomegranate schnapps - based on the juicy seed pulps from fully ripe pomegranates - is delicious and really outstanding.

Fruity, sweet-acid taste. Wonderful fragrance and flavours. And a beautiful red-golden colour.

Serve with chicken and other poultry, lamb, veal, rice, shellfish, salmon, salads, fruit salads, cheese, cheese cakes, ice creams, baked pears and other desserts.

Or add it to soups, sauces, salad dressings, marinades, marmalades, sorbets, ice creams - and to dishes where you would normally use pomegranate juice.

Pomegranate

Pomegranate tree with ripe pomegranate fruit - Punica granatum Punica granatum

Pomegranate is also known as the Jewel of Winter.

It's a dense, sometimes spiny shrub or small tree with a pale, brownish bark and light green, oblong leaves.

The orange-red, fragrant flowers are followed by round, apple-like fruits with thick, leathery and yellow-green-red rind or skin.

The pomegranate fruit is packed with seeds in transparent, whitish/pink/red and juicy pulps (arils).

There is one seed in each pulp.

The pomegranate tree is believed to have originated in the area from eastern Iran to the Himalayas in northern India. It has a long history dating back to ancient times.

The seed pulps are eaten fresh, especially in fruit salads and desserts.

The juice is made into sauces, jellies, and syrups such as grenadine - a strong, sweet syrup used in drinks, sorbets and jams.

Other parts of the tree - trunk bark, root bark, fruit rind, flowers and leaves - are used for health and medicinal purposes as well as in tanning of leather and dyeing of textiles.

Recipe

For best result, use seed pulps from fully ripe pomegranates of good quality. Organic if available. Cut the pomegranates in quarters, pull back and gently pull out the seed pulps. Discard everything else.

Direction:

  • Place seed pulps from 1-2 fully ripe pomegranates into a clean glass jar with tight-fitting lid.
  • Add 35 cl clear, unflavoured vodka - 40% alcohol content (80 proof).
  • Let steep for 3-4 weeks in a dark place at room temperature, 18-20°C (64-68°F).
  • Shake lightly and taste it from time to time.
  • Strain and filter your infusion into a clean glass bottle or jar with tight-fitting lid.
  • Store (age) for a month or more in a dark place at room temperature before serving.
